Mama’s Baked Oysters


  • 1 qt. oysters, drained (reserve liquid)
  • 1 cup chopped fresh parsley
  • 1 cup celery, chopped
  • 1 Tbs. Panola Worcestershire Sauce
  • ½ cup melted butter
  • 3 cups saltine cracker crumbs
  • 1 pint Half & Half cream, add more if necessary
  • 3 tbs. Panola Gourmet Pepper Sauce, or to taste
  • Salt, pepper, and paprika to taste


Sauté celery in oyster juice and butter – just a few minutes. Butter your casserole dish. Add a layer of cracker crumbs, then oysters, then celery and juice. Season with parsley, Panola Gourmet Pepper Sauce, Panola Worcestershire Sauce, and a lot of black pepper. Add half of the Half & Half. Make another layer of the same ending with the rest of the Half & Half. Top with more cracker crumbs and butter. Bake in the oven 350 degrees for 30 minutes.
